I love our traditional Christmas Brunch. We open gifts and have coffee, but wait until all our gifts are done before we eat. Then I create a nice brunch to sit down to and enjoy each other, talk about the morning, and our gifts while we eat a yummy meal. Each year we have tried and true items, waffles, fruit, bacon sausage, but I love to create a new recipe to try. Sometimes those recipes become traditions as well.

I think this amazing, beautiful and colorful bread will be one of them, Cherry and Nuts Christmas Bread. It doesn't take long to make, and not only is it full of gorgeous colors, but the flavors of lightly sweet cherries with crunchy nuts in fresh bread are so perfect together. Smear on a little butter, or your favorite jam, toast a slice or just eat it fresh from the oven, it's versatile as well.

I chose to buy the large packages of Rhodes White Bread, I use it for loaves of fresh white bread to serve with a pot of hot stew, or I mix other ingredients with it and make a sweet or savory loaf.

You will need-

Recipe

2 thawed loaves of Rhodes White Bread

1 egg

1/3 cup slivered almonds

1/3 cup of pecan halves

2/3 cup each of green and red candied cherries

a Bundt pan and cooking spray.

Instructions- 

Spray pan with cooking spray. Chop thawed bread with 1/2 of the nuts and cherries. Add rest of cherries and nuts and one egg. Chop until all dough is in small pieces. Place into Bundt Pan, allow to rise for 1 hour. Bake at 350 degrees for 1 hour. Serves 15-20.

Begin by first spraying your Bundt pan with cooking spray.

Image titleThen add the two loaves of bread to a cutting board, begin to chop them up. Then add handfuls of the cherries and nuts, and continue chopping the bread. 

Image titleOnce you have the cherries and nuts chopped a little, add the rest of the nuts and cherries and one egg to the mix. 
Image titleChop only until you have no large pieces of dough left. Image titlePlace into your Bundt pan.
Image titleAllow to rise for one hour.

Bake at 350 degrees for 50-60 minutes, until the top thumps and sounds hollow.

Remove from pan and allow to cool on rack.
