Cheesy Ranch Chicken Rolls

I'm always on the lookout for a new and easy dinner recipe! Recently I've discovered that a Rotisserie chicken can bring a lot of easy variety to dinner time! It's all cooked and ready to be eaten, so you can quickly prep a fun idea like this one.

Cheesy Ranch Chicken Rolls

Just like with every Rhodes recipe, you want to pull out the dough at least an hour or two before you're ready to prep dinner! If I'm running late, or forget, I preheat the oven and put the rolls right on top, covered by a towel to trap the warm air! Works like a charm.

Roll out each circle. I quickly do this first and line them up so that the next step is easy!Cheesy Ranch Chicken Rolls

Mix the chicken, cheese and seasoning well and then drop a heaping tablespoon into the middle of each dough circle.

On each roll, fold two of the sides of dough in with slightly moist fingers so that they stick.

Then repeat with the remaining two sides. You'll want to make sure that it's sealed up so that none of the cheesy goodness escapes.

Lay out your prepped rolls on a baking sheet. And brush an egg wash (1 egg and a teaspoon of water whisked) over the rolls so that they turn a nice golden brown! Sprinkle with some Kosher Salt, if desired!

Serve these up for lunch or dinner with a side of veggies and some ranch dip! The rolls by themselves make a good afternoon - or midnight snack!
