This Cheesy Pesto Bread is like a thin crust pizza with Parmesan and Mozzarella cheese.

This Cheesy Pesto Bread is like a thin crust pizza.  But don't let that description hold back with how you serve it.  I also slice it in squares and serve it with soup or as an appetizer.  I like to change it a bit by using different cheeses.  Fresh mozzarella is great, but at my house we love a blend of mozzarella, asiago and Parmesan cheeses.  It is simple to make but oh, so delicious.

 

Here's what you'll need:

  • 6 Rhodes Texas rolls (or 9 Rhodes dinner rolls) thawed to room temperature
  • 1 T. melted butter
  • 1 tsp. Italian seasoning
  • 4 T. prepared pesto
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Combine the thawed rolls together and roll out into a 13-inch circle.  Place on a sprayed pizza pan.

Brush the dough with the melted butter.  Sprinkle with the Italian seasoning.  Cover with plastic wrap and let rise for 20-30 minutes.

Pre-heat the oven to 350 degrees.  Remove plastic wrap and poke the dough with a fork to prevent bubbles from forming while baking.  Bake for 10 minutes.  Crust will not be brown at this point.  Remove from oven.  Spread pesto over entire crust.

Sprinkle cheeses over the top of the pesto.

Bake for an additional 10-12 minutes at 350 degrees or until cheese is melted.

Slice and serve. That was easy.  I'm sure you'll want to experiment with more options.  Rhodes makes baking so easy.  Now go pull some Rhodes Rolls out of your freezer and get started on dinner!

Ingredients

9 Rhodes Yeast Dinner rolls or 6 Rhodes Texas rolls, thawed to room temperature
1 tablespoon butter, melted
1 teaspoon Italian seasoning
4 tablespoons prepared pesto
1 cup grated mozzarella cheese
1/2 cup shredded fresh Parmesan cheese

Instructions

Spray counter lightly with non-stick cooking spray. Combine Texas or dinner rolls together and roll into a 13-inch circle. Place on a sprayed 12-inch pizza pan. Brush with butter and sprinkle with Italian seasoning.

Cover with plastic wrap and let rise 20-30 minutes.

Remove wrap and poke several times with a fork to prevent bubbles from forming.

Pre-bake at 350°F 10-12 minutes. Remove from oven and let cool slightly.

Spread with pesto. Sprinkle cheeses over pesto.

Bake at 350°F an additional 10-12 minutes or until cheese is melted.
