Cheesy Chicken Rolls

These delicious rolls resemble Chicken Enchiladas. A great brunch, lunch or dinner recipe.

Cheesy Chicken Rolls

Don't let the list of ingredients scare you away from this recipe.  It may take a little bit of time.  But add a salad and you've got yourself a meal with this recipe. It's cheesy, and creamy and so delicious.

Start with
12 Rhodes dinner Rolls, thawed to room temperature,
1 10 oz can cream of chicken soup with herbs,
I just use a can of cream of chicken soup and add my own herbs.  I'll explain below.
2 1/2 cups grated cheese, divided, cheddar works but we like colby jack at my house
1/2 cup milk
2 T. chopped fresh basil, or 1 T. dry basil
4 oz cream cheese, softened
2 T butter, softened
1 tsp garlic powder
1 tsp minced onions
2 chicken breast, cooked and diced
1 4 oz. can diced green chilies
1/2 tsp salt
1 tsp pepper

Like I said, don't turn back.  You will love the results of this recipe.

First make the sauce.  If you are using regular cream of chicken soup add 1 tsp dry chives, 1 tsp dry parsley flakes and 1/2 tsp dry thyme.  Then add 3/4 cup cheese, 1/2 cup milk and 1/2 of the basil.

 

Mix together and stir until smooth.

 

Spread 1/2 of the mixture in the bottom of a sprayed 9x13 baking pan. Set aside.

 

Now make the filling. In a bowl combine cream cheese and butter until smooth..  Add garlic powder, onions, chicken, green chilies, 3/4 cup cheese and mix well. Add basil.  Season with salt and pepper.

 

 On a counter lightly sprayed with non-stick cooking spray, roll or press each roll into a 5x5 inch square.

 

Divide filling equally between each square.

 

Fold two opposite sides over filling and pinch to seal.

 

Fold remaining two sides together and pinch to seal.

 

Place each roll into the baking pan seam side down.

 

Continue until all rolls are in baking pan.

 

Spread remaining sauce over all the rolls.

 

Sprinkle with the last of the cheese.

 

Bake at 350 degrees for 35-40 minutes.  Loosely cover with foil the last 5 minutes if necessary to prevent over browning.  Serve while warm.

12 Rhodes Yeast Dinner Rolls, thawed to room temperature
1 10 3/4 ounce can cream of chicken soup with herbs
2 1/2 cups grated cheddar cheese, divided
1/2 cup milk
2 tablespoons chopped fresh basil
4 ounces cream cheese, softened
2 tablespoons butter, softened
1 teaspoon garlic powder
1 teaspoon minced onion
2 chicken breasts cooked and diced
1 small can diced green chilies
1/2 teaspoon salt
1 teaspoon pepper

Instructions

Sauce:
Combine soup, 3/4 cup cheese, 1/2 cup milk and 1 tablespoon fresh basil. Mix together and drizzle 1/2 cup of mixture in the bottom of a sprayed 9x13-inch baking pan.

Filling:
In a bowl combine cream cheese and butter until smooth. Add garlic powder, onion, chicken, green chilies, 3/4 cup cheese, remaining basil and mix well Season with salt and pepper.

On a counter lightly sprayed with non-stick cooking spray, press each dinner roll into a 5-inch circle. Divide filling equally between the 12 circles. Pull dough up around filling and pinch together to seal. Place each roll into the baking pan pinched sides down. Pour remaining sauce on top of the rolls. Sprinkle with remaining cheese. Bake at 350°F 35 minutes. Cover with foil the last 5 minutes if necessary to prevent over browning.
