Cheesy Breakfast Pizza

This is a delicious way to start off any morning!

Cheesy Breakfast Pizza

The holidays are upon us and there’s no better time then right now to be in the kitchen baking up delicious recipes.  In fact, I spent part of my Thanksgiving morning baking up this quick and simple “Cheesy Breakfast Pizza.”  Here is the recipe and a photo of all the tasty ingredients.  (My mouth is watering.)

Ingredients
6 Rhodes™ Texas or 9 Dinner Rolls

2 eggs

¼ cup heavy cream

salt and pepper to taste

½ cup grated mozzarella cheese

½ cup grated provolone cheese

1 cup grated cheddar cheese

½ cup chopped cooked ham

2 tablespoons chopped green onions

Fresh ground black pepper if desired

Spray counter lightly with non-stick cooking spray.  Combine rolls and roll into a 12-inch circle.  Place on sprayed pizza pan and poke several times with a fork to prevent bubbles from forming.

Bake crust at 375º for 5-10 minutes until it begins to turn golden.

Combine eggs, cream, salt and pepper.  Add ham, onions, and cheeses.  I decided to use crumbled bacon instead of ham, so I didn’t add the salt.  I chose to leave out the pepper as well.  The bacon added great flavor and the “men” (my husband and two sons) in my house think that bacon needs to be served with everything.

Before I started making this recipe, I was not quite sure how I was going to keep the mixture in the center of the crust, because I was thinking the egg and cream would be pretty liquid.  When I got the ingredients measured out and started putting it all together I could see how it was going to work.  When you mix the eggs and cream together it begins to thicken up.  Then when you add the bacon, onions, and ALL the cheeses it becomes a nice thick mixture that doesn’t run at all.

Spread mixture evenly over pre-baked pizza crust. (See how nice it looks even before it is baked.)  When I spread it over the crust it seemed a bit thin and I didn’t think there was going to be enough filling. Once it was baked it was just right because the eggs had expanded during the baking process. Bake for 10-12 minutes.  Sprinkle top with freshly ground black pepper if desired.  Again, I chose to not use the pepper

My husband and older son got home from their Thanksgiving morning football game just in time for this “all-in-one” breakfast dish.  We “gobbled” it down with smiles on our faces and our tummies were happy.  What a great beginning to a day of fabulous food.

This recipe was so simple that I have already made it again for my family.  It is a perfect meal for my teenage son to eat on his way to school…(especially when he sleeps through his alarm.)  I hope you will enjoy this recipe as much as we did.
