Cheese and Sausage Flat Bread

 Hello, how are all my fellow bakers this fine February.  We have had quite a cold snap in the land of mountains (Utah).   It's been quite dreary with very little view of the sun.  So what I like to do is find my own sunshine.  What better way than to pull Rhodes Rolls out of the freezer and bake up a little sunshine of my own?  I have got a yummy recipe for you all to try out in the month of love.

You will need the following ingredients

 6 Rhodes Dinner Rolls, thawed to room temperature

1/4-1/2 pound ground sausage

1/2 teaspoon minced garlic

2 teaspoons olive oil

2/3 cup grated Asiago cheese

1/3 cup grated mozzarella cheese

1/2 cup red pepper strips

1/3 cup onion strips

1 tablespoon grated Parmesan cheese

1 tablespoon chopped fresh basil, if desired

Combine rolls.  Usually we tell you to make sure the dough is cold to the touch.  Although for any recipe I do that you need to roll out into a pan, it is best if the rolls are warm and bubbly.

Spray counter lightly with non-stick cooking spray and roll into a  10x15-inch rectangle.  If the rolls are still cold have no fear. Roll them out, cover with plastic wrap that has been sprayed with non-stick cooking spray.  Allow the rolls to rest for 10 min., read a book do some dishes etc.,  come back to the dough and roll again.  This is a pretty thin crust so if you have a hard time getting to full size it's ok.  

*** What else I tried, I felt like 6 rolls were a little hard for me to roll to the desired size. I added two more rolls. I didn't have my dough tear as much and had a thicker crust.***

Place on a sprayed baking pan.

Brush with olive oil and poke several times with a fork to prevent bubbles from forming.

Cover with plastic wrap and let rise 30 minutes. In this step sometimes your dough will spring in again.  No worries,  this is kind of a rough looking flat bread so if it's not perfect it's ok.

I will even spread to the edges of the pan again to reform the shape.

 Brown sausage and garlic and drain.  While you are are allowing your dough to rise.

Layer dough with cheeses, sausage, red pepper and onions.

 Bake at 350°F  10 minutes.

***What I modified.  I didn't feel like this was enough time to bake all the way through.  So, this is what I tried.  I prebaked the crust for 5-8 minute, then layer the toppings and baked for an additional 10 minutes.  Next add the Parmesan cheese and basil, bake for an additional 3-5 minutes.  The next test was to turn up the oven temperature to 425 degrees and baked for 15-18 minutes.  I liked it cooked at a higher temperature.  You can decide which one works best for you and your oven.***

Sprinkle with Parmesan cheese and basil and bake for 3-5 minutes more.

Slice and serve this delious flat bread.  You can substitute any meat or protein source that you wish if you have certain diet and palette restrictions. 

As I was editing my pictures my seven year old daughter, Ellie, walked up and saw what I was working on.  She said with a very dramatic "tween" eye roll,  "Ohhhh!  Mommy that was sooo good!  I loved it so much..... I just took off the red things (peppers) that I don't like. 

You can modify this recipe for all the likes..... and dislikes in your family.  It was fun baking with you all again!  I will hang up my apron for now until we bake again!  Happy baking, and continue to bring the sunshine into your life.

Bake at 350°F 10-15 minutes. Sprinkle with parmesan cheese and basil and bake for 3-5 minutes more.
