Caprese Sandwich

A summer day would be complete without this wonderful Caprese Sandwich.

I don’t think a summer day would be complete without this wonderful Caprese Sandwich.  I loved the simplicity of this recipe.  I had a meal for my family in no time.  And while it was so refreshing and light to eat, my tummy was very satisfied.  Here’s what you need.

 

Caprese Sandwich

1 Rhodes Mini Baguette, baked following instructions on package

pesto

3 slices fresh tomato

2 slices fresh mozzarella

3-4 fresh basil leaves

balsamic vinegar

While the Mini Baguette’s were baking (I baked the entire bag…I had a family to feed), I sliced the tomatoes, sliced the cheese (actually I cheated…I didn’t really slice the cheese…I bought it pre-sliced), and washed and separated the basil leaves.

When the baguettes were cool enough to handle, I cut them in half lengthwise.  Then I spread pesto over the bottom half of each baguette.  I topped it with the tomato slices, mozzarella slices, and basil.  I drizzled it all with yummy balsamic vinegar, and then covered it up with the baguette top.

Mmmm…so tasty.  I loved how all the ingredients blended together to create such an amazing flavor.  I don’t think you can go wrong with a recipe like this.  AND…I’m pretty sure your tummy will thank you...mine did!

Ingredients

1 Rhodes Mini Baguette, baked following instructions on package
pesto

2 slices fresh mozzarella

Instructions

Cut baguette in half lengthwise. Spread pesto over bottom half of baguette. Top with tomato slices, mozzarella slices and basil. Drizzle with balsamic vinegar. Cover with baguette top.
