I love a good Caprese Salad. I especially love the fresh mozzarella. For this month's post, I decided to turn my favorite salad into a little pizza bite. They are so cute and super delicious. These caprese bites are a great party appetizer or even a quick lunch.
These Caprese Bites are so simple to make. They only require a few ingredients and they pack a ton of flavor. I am going to show you how I made them below. This is really a method more than a precise recipe. Feel free to use more or less of any ingredient. If you love balsamic, add more! If you hate balsamic, substitute with a drizzle of olive oil. Make it your own! Let's cook!
Here is what you need:
Drizzle each pizza bite with some balsamic vinegar
Bake at 375 for 12-15 minutes, until lightly brown.

Rhodes Frozen Dinner Rolls, thawed (1 roll per pizza bite)
Tomatoes (Campari or Roma)
Press thawed rolls into a 4-inch circle. Top each roll with about a teaspoon of pesto (more or less to taste). Top the pesto with some tomato slices. Top the tomatoes with some fresh mozzarella. Drizzle each pizza bite with some balsamic vinegar. Bake at 375 for 12-15 minutes, until lightly brown.
