One bite into these little pizza's and I felt like I discovered a treasure. I can't tell you how many times I've skimmed the Rhodes Home Baked Family Favorites Cookbook and skipped right over these. Then, one day I was flipping through the cookbook and they caught my eye. The first thing that I noticed is they are individual pizzas.

What interested me about that is I don't particularly LOVE rolling out the dough into a 15 in or so circle (it's always so difficult for me). The second thing I noticed is that, well, they looked delicious! So I ran to the store to pick up the couple of things that I don't carry always and was on my way. They were fun to make, simple, and relatively quick.

As they baked they puffed up to the perfect mini-pizza perfectness. Once out of the oven I couldn't help but dive right in. It was simply wonderful. Although theses would be great anytime, they would especially be the perfect football party food - if you are into that!

Line them up: Rhodes™ Dinner Rolls, boneless chicken breasts, diced, smoked paprika, cayenne pepper, butter, Franks Red Hot Sauce, bleu cheese dressing, grated mozzarella cheese and celery, for garnish (optional).

Spray counter (or a cutting board) lightly with non-stick cooking spray. Flatten each roll into a 5-inch circle. Cover with plastic wrap and let rest.

Lightly spray frying pan with non-stick cooking spray (I used extra-virgin Olive oil). Quickly cook diced chicken in pan and season with smoked paprika and cayenne pepper. It will oddly smell like bacon. Try it. You will see.

Remove from heat.

In a small bowl, combine butter and hot sauce.

Pour over chicken to evenly coat. Yummy!!!!!

Remove wrap from dough circles and place circles on a sprayed baking sheet (or Silpat). Top with bleu cheese dressing.

Arrange chicken evenly over dressing.

Sprinkle with mozzarella cheese. Bake at 400°F 10-15 minutes.

Remove from oven and garnish with celery if you like. I don't prefer celery, so I left it off. Tell me that doesn't look delicious. Just imagine how wonderful it tasted!

Ingredients

8 Rhodes Yeast Dinner Rolls, thawed to room temperature
2-6 ounce boneless chicken breasts, diced
smoked paprika
cayenne pepper
2 tablespoons butter, melted
1/2 cup Franks Red Hot Sauce
1/4 cup bleu cheese dressing
1 cup grated mozzarella cheese
celery, for garnish

Instructions

This looks ridiculously delicious! I'm not the biggest fan of blue cheese dressing but I am going to go out and get some so I can try this out. Lunch solved thank you!
