I'm not a huge breakfast fan but I love french toast. It's so delicious. I could have it any time of day. I especially love blueberry french toast. It's my favorite. I was craving french toast the other day but I didn't have any bread in the pantry to make it with. Then I remembered I had a package of Rhodes dinner rolls in the freezer. I know what you're thinking "Frozen dinner rolls for french toast?" but yes, they work and they actually are perfect for this dish.

I pulled the bag out of the freezer and let a couple rolls thaw out a little. Then I rolled them in a cinnamon-sugar mixture, put them in a greased loaf pan and set them aside to increase in size. Once increased, I popped the pan in a 350 degree oven for about 20 minutes. Once the bread cooled, I chopped it up into bite-sized pieces.

If you have ever made french toast, you know what's next!! I created my soaking mixture! I mixed together my eggs, milk and vanilla and put all of my bread to soak. In a small pan, I started my blueberry sauce. I boiled my sugar, water and cornstarch for about three minutes, then added my bueberries and let them cook about 10 minutes over medium heat.

I tossed my bread into a pan and let it do its thing. Really, french toast is foolproof. It pretty much cooks on its own. Here's what everything looked like:

Then you just transfer your bread to a plate, top with the blueberry sauce and ta-da perfect french toast!!! It is really simple and so delicious!

Ingredients

6 Rhodes Dinner Rolls, thawed but still cold
1 cup granulated sugar
1 tsp ground cinnamon
2 eggs
2 tablespoon milk
1 tsp vanilla extract
1/2 cup granulated sugar
1/2 cup water
1 tablespoon cornstarch
1/2 cup blueberries

Instructions

In a small bowl, mix sugar and cinnamon. Roll each dinner roll in mixture and place inside a greased loaf pan. Cover pan with plastic wrap to rise until double in size. Preheat oven to 350 degrees and cook bread 20-22 minutes. Let bread cool.
Chop bread into bite-size pieces. Prepare egg mixture by mixing eggs, vanilla and milk in a medium bowl. Add bread to bowl and let soak. Meanwhile, in a saucepan, bring sugar, cornstarch and water to a boil over medium heat. Add blueberries and continue cooking over medium heat for about 10 minutes. Heat pan or griddle over medium-high heat and add bread. Cook thoroughly, about 10 minutes. Remove from heat. Transfer bread to plate and top with blueberry sauce. Enjoy!
