Becca's Breakfast Sandwich

I am in love with all of the Rhodes products!  I’d never thought about using them for more than just bread and rolls though. I admit to being completely unimaginative in that department! I was amazed when I received a copy of Rhodes Home Baked Family Favorites . There were so many recipes I was missing out on! My family loves breakfast for dinner so I was excited for some new recipes to try out on them. As I flipped through the recipe book Becca’s Breakfast Sandwich looked so yummy I knew it would be the first recipe I would try. You will need to plan ahead and bake your Rhodes loaf of bread the day before but it is so worth it! You will need the following ingredients.

2 slices Rhodes White Bread, baked ahead following package instructions.

1-2 strips bacon

2 sun dried tomatoes, packed in oil

1-2 eggs

1 tsp sour cream

Salt and papper

2 thin slices Gruyere cheese

Butter

This sandwich is perfect for breakfast.


Slice bread and set aside. Cut bacon into ¼ inch strips and fry in a small frying pan on medium low.

This sandwich is perfect for breakfast.

 

Cut the sun dried tomatoes into ¼ inch strips and place in another pan on medium low. (I bought precut sun dried tomatoes so I was able to skip that step). Allow to heat for 1 minute then add eggs and sour cream to the pan.

This sandwich is perfect for breakfast.


Season with salt & pepper and gently scramble. Place one slice of cheese over eggs.

This sandwich is perfect for breakfast.


Begin toasting sliced bread. Drain bacon strips on a paper towel.

Butter toast and place half of the bacon and the eggs, cheese side down on one slice.

This sandwich is perfect for breakfast.


Top eggs with remaining bacon and second slice of cheese. Place remaining slice of toast on top.

This sandwich is perfect for breakfast.

I wasn’t able to find thin sliced Gruyere cheese at my grocery store so I bought a block of it instead. Not a good idea! I couldn’t get the cheese sliced very thin. In the future if I couldn’t find that type of cheese I would switch it to Swiss and I bet it would melt and blend together much better.  This was the yummiest breakfast sandwich I have eaten in a long time!
