Ingredients
6 cups Rhodes™ White Bread, baked and cubed
3 eggs
2 teaspoon vanilla
1 teaspoon cinnamon
2 cups milk
pecans, chopped
1 cup sugar, granulated
1 teaspoon nutmeg
1/4 cup margarine, melted
1/2 cup raisins
ice cream or whipping cream, optional
Instructions
Bake bread dough as instructed on package. Using a large bowl, beat eggs on high speed until frothy. Add sugar, vanilla, nutmeg, and cinnamon. Continue beating on a lower speed while adding milk. Cut about 6 slices of bread into 1inch cubes leaving crusts on. Butter inside of a 9inch square pan and add bread cubes. Sprinkle raisins and pecans over bread cubes. Pour milk mixture over bread cubes. Cover and refrigerate for 40-60 minutes. Stir bread cubes after 30 minutes of soaking to completely submerge all bread cubes.
Remove cover and bake at 325° F for 45-60 minutes or until pudding is firm and brown. Cool slightly and cut into squares. Serve warm with generous dollops of ice cream or whipping cream.
