Another option, which I have used many times because of my frequent lack of planning, is to use a quick defrost method when your rolls are still frozen. I say "rolls" in this post because it seems more tricky to me to defrost a frozen loaf of bread than to defrost frozen rolls. My preference has been to use Rhodes Texas Rolls.

So, what I do when I forgot to get the rolls out earlier in the day is to take my bag of Rhodes Texas Rolls and divide them into three plastic bags (8 rolls in each bag).

I take the first bag and microwave it for 40 seconds. Then I do the same to the other two bags.

Second, I wait for about two minutes to let the dough cool down again. The worse thing you can do is to over-heat the dough or start to cook it in the microwave.

Third, I repeat the process but I reduce the time to about 30 seconds each bag. Then let the dough rest for a few minutes.

While doing this defrost process I do two things. I check the dough before putting it back into the microwave making sure it is not too hot or testing to see if it is warm enough to be able to mash the dough balls into one large dough ball. If the dough is too cold, it will not roll out very easily. The second thing I do, while dough is resting, is to gather my other ingredients and get out my pizza makers. (Yes, makers, as in plural! Having 6 kids means I need to cook more than one pizza at a time!)

Fourth, with each rotation into the microwave, the dough is going to be more likely to get too hot. So this time reduce the time to about 15 seconds (or 10 if your microwave is extra powerful!) It is better to do a couple shorter times than over-heat the dough by attempting another long time cook.

The dough should be about ready to mash together. Keep the dough in the bags and out on the counter until you are ready to start rolling out the dough.

FYI - I don't usually let the dough rise before rolling it out. I am not patient enough for that! It always turns out perfect (or so the kids keep telling me! Maybe they say that just so I will make pizza for them!) Whatever the reason, the kids eat it!

Some really priceless moments seem to happen around the times when we gather together to prepare and eat meals. One of those moments happened last week during Friday night pizza night.

My wife and had go out and left two of our older boys to cook the pizzas. As usual, I had thawed my bag of Rhodes Texas rolls and separated them into three bags. I we left, I reminded the boys that the Mozzarella cheese was in upright freezer in the garage.

Also in the upright freezer in the garage was some bags of shredded hash browns! These uncooked, and unmarked bags of hash browns look just like frozen Mozzarella cheese.

I am sure you guessed it, my boys mistakenly used the hash browns instead of Mozzarella! They could not figure out why the cheese wouldn't melt. I just had to laugh at this and decided that I needed to start making sure all the stuff in the freezer is labeled!

In all fairness to them, I looked at the hash browns, and they really did look like frozen Mozzarella cheese. Some of these little disasters that happen seem to turn out to be some of the most memorable and funny!

A conventional oven should work just fine. Temperature is going to be 350 degrees if you are using a normal pizza pan. If you like using pizza stones, stay tuned for more information about how to use these with Rhodes dough.

The cooking time is going to be about 18 to 25 minutes. I can't resist looking every few minutes to make sure everything is melting perfectly.

Ok, so normally pizza night is Friday night at our home, but this past Friday, pizza night was preempted by a BBQ for our second son who graduated from high school! Yeah! It is always great to see your kids succeed in life!

So our pizza night was moved to Sunday night after church. I put dough out on the counter before we left for services and when we go back, it was just about ready to use!

I was interested in trying a different type of pizza so I picked up a deep-dish pizza pan and tried a version of the Rhodes Chicago-style pizza.

This will be a permanent addition to our pizza menu! My ingredients included; hamburger, sausage, peppers, canadian bacon, pepperoni, mozzarella and parmesan cheese.

Canadian Bacon Pizza

Here is my version of the traditional Canadian Bacon & Pineapple pizza minus the pineapple. Add pineapple if you want, it will still taste great! My little daughter just does not like pineapple, so I leave it off for her.

Ingredients

Canadian Bacon
Pineapple (optional)
Mozzarella Cheese
Cheddar Cheese
Parmesan Cheese
Ranch Salad Dressing
Rhodes Texas Rolls (8 rolls per 12" pizza)

Simple Instructions

1) Create crust using Rhodes dough and pre-bake 5 minutes
2) Spread about three tablespoons of Ranch Dressing on crust.
3) Sprinkle Mozzarella Cheese on top of dressing. I probably use about 1 to 2 cups.
4) Cut Canadian Bacon into small pieces and spread evenly over pizza.
5) (optional) Cut Pineapple into small pieces and spread evenly over pizza.
6) Sprinkle pizza with Parmesan Cheese.
7) Use a small amount of grated Cheddar Cheese sprinkled over the top. This is more for some added color than to add flavor.

Baking time depends on the pizza oven that you are using. My Presto Pizzazz Pizza maker requires about 12 minutes.
