Mexican Donuts
Ingredients:
- Rhodes Dinner Rolls (as many as you like)
- Oil, sufficient for your deep fryer
- 1 bag Coconut, shredded
- Chocolate Sauce
- 1 tbsp Powdered Sugar
Background:
Mexico has a large variety of donuts and many of these are uniquely Mexican. To find them in the US, you typically have to go to a Mexican/Latino market. There is of course one specific donut that you may be able to find at a fine Mexican Restaurant and then it is simply called, a Mexican Donut. The Mexican Donut is covered with sugar and cinnamon or perhaps just sugar. It ranges from powder sugar to coarse sugar. It can also be covered with other toppings like Coconut. Since I have already provided several recipes that contain a cinnamon/sugar mixture, I will complete these with a coconut / chocolate mixture. Enjoy the yumminess!
Directions:
Thaw your Dinner Rolls so that they are thawed but still cold.
Heat your oil in a deep fryer to 375 degrees F.
When your oil is ready, place each roll into the oil making sure that they do not touch, and are not sticking to the bottom.
Let fry for 10 minutes.
Place the rolls on paper towels to remove the excess oil.
Now, place some chocolate sauce in a small bowl and the coconut in another small bowl.
First roll your donut in the chocolate sauce.
Then roll in coconut.
The last step is to add powdered sugar on top.
mmm, Now the best part... they are ready to eat!!

Mely Torres was born in California to immigrant parents from Mexico. She spent the summers of her childhood on her Grandfather’s large Ranch in Mexico. As an Adult, she worked her way up the corporate ladder to become an Executive by the time she was 30. For years her main focus was travel, work, and service in Mexico, the Katrina devastated Mississippi, the Canary Islands, and other locations. In 2009 during a vacation in Ireland, she met the Irishman who became her husband. They now live in London, OH where Mely dedicates her time to raising their toddler, and her hobbies of Genealogy and cooking. When asked, Mely will tell you that her love of cooking comes from the time she spent during the summers of her childhood on her family’s ranch.
