- 12 Rhodes Cinnamon Rolls, defrosted and risen a bit
- 3/4 cup white sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon ground cloves
- 3 eggs
- 1 (15 ounce) can Pumpkin
- 1 (12 fluid ounce) can Evaporated Milk
- 3/8 cup Flour
In Mexico and other Latin countries, it is not unusual to find pumpkin as a stuffing within the sweet breads. This recipe highlights pumpkin cooked as you would for a pie but used as the filling for an Empanada. Enjoy!
Combine the sugar, salt, cinnamon, and cloves in a large sauce pan.
Now add 2 Eggs and stir until blended well.
Stir in the pumpkin.
Gradually stir in the evaporated milk. It should look like this.
Now cook on Medium to medium high heat for 10 minutes.
Set aside to cool.
At this point, your rolls should look like this.
Now take your rolls and press rolls together into a ball and place on tin foil. It is going to get messy!
Add ¼ cup of flour to the ball.
Your going to knead, knead, and knead the flour into the ball of dough. The dough may start out very moist from the cinnamon paste but it should end up with only patches of moistness. Use the remaining flour to cover the remaining moist sections with flour and knead.
Now, pull off a ball of dough about the size of your palm and caress it into a ball. You should end up with 18 balls.
Take each dough ball and roll them flat and round. Use some flour to keep it from sticking if needed.
Once your filling is warm or cool, place about 3 rounded teaspoons of the filling in the dough.
You want to close the dough by flipping down half of the dough until it touches the edges of the bottom.
Seal the dough by flipping the tip of the bottom edge over the top edge and pinching it.
Place them on a sprayed baking sheet.
Now take that egg and brush it over your dough.
Bake at 350 degrees F for 15 to 20 minutes….. AND…
My favorite cousin Martin Corona was the taste tester this week and he gave these Empanadas a 9 out of 10. These are Yummy!!!
