Hello my lovelies, let’s strap on our aprons for another wonderfully delicious Rhodes recipe.   Focaccia; made with tarragon, butter, and garlic, what could be better?

This Focaccia bread will bring new life to any sandwich or meal.   This bread is thin and wonderfully seasoned. Your family or friends will shout for joy and praise your wonderful cooking abilities.

I know I am always looking for a new twist for sandwiches.  I have 5 children ranging in age from 17 to 7.  We make a lot of sandwiches and school lunches in our home.  My kids have gotten a little burned out on your traditional sandwich, lunch, etc. Something new and fun is always appreciated.

You will need the following  ingredients: 

1 loaf Rhodes ™ Bread Dough, thawed and risen 

1/4 cup butter, melted ( ½ a cube) 

1 clove garlic, minced 

1/2 teaspoon tarragon

9x13 baking pan

Rolling pin

Non-stick cooking spray

Plastic wrap

Place frozen loaf of bread in a zippered plastic bag.  Set on counter to thaw and rise, or place in the refrigerator the night before to thaw and rise over night.  

Preheat oven to 350 degrees

Once your bread has thawed and risen spray counter or work surface with non-stick cooking spray.  It is also very helpful to spray your rolling pin too.   You don’t need to let the dough  rise until double in size to roll into your shape.  Although the dough will be easier to roll into a rectangle to fit your 9x13 baking pan.  Let rest and prepare butter mixture.

Now prepare the following ingredients. Set aside 2 tablespoons of butter to brush into the bottom of your baking pan. Melt 2 tablespoons butter; now mix with ½ teaspoon tarragon and one clove of minced garlic. I used a garlic press for my clove of garlic, it worked great!

Spray 9x13 baking pan with non-stick cooking spray.  Melt 2 tablespoons of butter that you set aside and brush into the bottom of your pan. Place dough that you have rolled into a rectangle into pan.  Use your fingers to push the dough into corners of pan.

Make several holes in dough about 1-inch apart. Pour butter mixed with tarragon and garlic over dough. Cover with plastic wrap.  I used a chopstick to make my holes.   So…… use what is available in your kitchen. It is fun to be creative!

Let rise 45 minutes. Remove wrap and bake at 350°F 15-20 minutes or until lightly browned.

All right, there are a few variations I would do.  I actually made this recipe 3 times wanting to experiment.  I wouldn’t let my dough rise as much for making sandwiches.  I want the bread to be a little thinner for sandwiches. You could also roll into a jelly roll pan for crispier bread.

A thick bread is great for garlic bread.  Eating for garlic bread I like it a bit saltier, so add a little salt.  If you are not a tarragon fan use Italian seasoning instead.We are huge fans of the BLT sandwich when we have fresh tomatoes in the garden.  This was a wonderfully delicious twist on our traditional BLT.  I have added this to our families’ dinner menu.  Delicious!

Rebecca is the mother of five children ranging in age from 5 to just shy of 16. Four girls and one boy make up the group. This is her first thought of who she is right now because it takes up the majority of her time. Between taking kids to swim practice, swim meets, ballet lessons, acting class volunteering at the school ..... Need she go on? She has been working at Rhodes for 2 1/2 years helping with in-store demos and classes at corporate headquarters on a part time basis. She has loved working for Rhodes and feeling like an individual again. Cooking is a love of hers and she just likes to eat food in general. Her new love is yoga and swimming and she's currently taking a little more time for herself with her youngest in now in kindergarten! Yah!
