Taco Nacho Pizza
Some of our favorite foods at my house are: TACOS, NACHOS and PIZZA. Really who does not love Tacos, Nachos and Pizza?
So why not combine them all in to a very yummy and fun meal? That is what we did tonight. We like things spicy at our house. We love Mexican food of all kinds so this recipe was right up our alley.
12 Rhodes Texas™ rolls, thawed but still cold

Directions:
Flatten each roll into a 5-inch circle. Place circles on two sprayed baking sheets.





I made a few adjustments to the recipe. That is one of the things I love about cooking is that you can always make things work with the way your family eats.
I decided to use some soy crumbles in stead of ground beef. We are not huge ground beef fans and my children can always use more veggies in their diet so we snuck these in.
I used the spicy Jalapeno refried beans. I pulled out a jar of salsa that I had canned last summer. I also decided to go with the Weight Watchers Mexican Cheese to try to keep it more low cal.
We all love the Taco Chips so this was a great reason to buy the super large bag at Costco.
I took some Texas Rolls out of the freezer and put them in the fridge to thaw.
They were still cold and my sweet husband flattened them into 5 inch circles. We also decided to just do 6 pizza’s instead of 12. There are 5 of us in our family.
I warmed the soy crumbles in a pan, added my taco season (which we also love and get at Costco) I used about 1/4 of a cup. I added the beans and some of the salsa.
It was fun putting the chips in a baggie and smashing em all up. I am NOT a fan of canned enchilada sauce so I choose not to coat the chips in the sauce.
So once the meat, beans and salsa were warm, I spooned it onto the pizza crust.
I sprinkled the chips on top of the meat mixture, topped it with the cheese and finished it off with the black olives and JALAPENOS. Like I said we like it SPICY at the ROGERS’ house.
My children think they do not like beans, ha ha ha. They loved the pizzas. Beans, soy crumbles and weight watchers cheese and all.
So if you can not decide to have Tacos, Nachos or Pizza go with all three and make these yummy TACO NACHO PIZZA’s tonight for your family. I know they will be a big hit.
