Hi guys, its Aimee from Like Mother, Like Daughter visiting again and I'm here to share an amazing chicken fajita pizza recipe with you. I love chicken fajitas, so I just knew I was going to love this recipe! This recipe is made super easy with Rhodes Rolls for the pizza dough, topped with salsa, cheese, grilled chicken, peppers and onions and fresh cilantro, this pizza is full of flavor that you'll love! Basically, you take some Rhodes Rolls, thaw them, roll them together to make a pizza dough. You'll want your dough to be about 12-14 inches across. Allow to rest for a few minutes while you grill your chicken and your vegetables for about 8 to 10 minutes till the chicken is cooked through. You'll brush one side of your dough with oil and put it on the grill. Cook it up for about 3 minutes, brush the top and flip it over to cook that side too. Spread your salsa over your crust evenly. Sprinkle it with your cheese. Spread your peppers, onion and chicken over the top of your cheese. Place pizza back on the grill and cook till the cheese is fully melted, about 3-5 minutes. Remove from the grill and sprinkle with cilantro. Slice pizza up and serve. Enjoy dipped in more salsa if desired. Hope you'll love this as much as we did! Ingredients: 6 Rhodes Texas Rolls or 9 Rhodes Dinner Rolls, thawed to room temperature vegetable oil 1 large skinless, boneless, chicken breast, cut into strips 1/2 each orange and yellow pepper 2 slices red onion salt and pepper 1/2 to 2/3 cup salsa 1 1/2 cups grated Monterey Jack and cheddar cheese 1 tablespoon chopped fresh cilantro Instructions: 1) Spray counter lightly with non-stick cooking spray. Combine rolls and roll into a 12-inch pizza crust. 2) Cover with plastic wrap and let rest. 3) Brush chicken, peppers and onions with oil and sprinkle with salt and pepper. Grill for about 8 minutes or until chicken is cooked. Cut peppers into strips and set aside with chicken and onions. 4) Remove wrap from dough and brush one side with oil. Carefully place oil side down on grill. Brush top of dough with oil. Grill 3-4 minutes on each side. 5) Remove crust from grill and spread with salsa. 6) Sprinkle half the cheese over the salsa. 7) Top with chicken, peppers and onions and sprinkle with remaining cheese. 8) Place back on grill and cover to melt the cheese, about 3-5 minutes. 9) Remove from grill and sprinkle with cilantro. 10) Slice up and serve.

16 Rhodes Yeast Dinner Rolls or 10 Rhodes Texas Rolls, thawed to room temperature
1 pound boneless, skinless chicken, cut into 1-inch pieces
1 tablespoon olive oil
1 green pepper, sliced
1 cup thinly sliced onion
2 cloves garlic minced
2 teaspoons chili powder
1 teaspoon hot sauce
1/2 teaspoon salt
3/4 cup salsa
1 1/2 cups grated Monterey Jack or mozzarella cheese
Spray counter lightly with non-stick cooking spray. Combine dinner rolls or Texas rolls together and roll into a 15x10-inch rectangle. Place dough on a sprayed 15x10-inch baking pan. Cover with plastic wrap and let rise 20-30 minutes.
Remove wrap and poke several times with a fork to prevent bubbles from forming.
Bake at 375°F 10-15 minutes or until lightly browned. Remove from oven and set aside.
In a skillet saute chicken in olive oil for about 5 minutes. Add the green pepper, onion, garlic, chili powder, hot sauce and salt. Cook 1-2 minutes longer. Spoon mixture over crust and top with salsa and cheese.
Bake at 350°F 10-15 minutes or until crust is golden brown and cheese is melted.
