Artichoke Appetizer

Just in time for the Holidays a yummy and a little different Appetizer. Artichoke Appetizer.  I love APPETIZERS, in all honestly I would rather just eat appetizers all night and skip the main meal.

Here is what you will need:

Ingredients:

8 Rhodes Texas™ Rolls thawed and risen

14 ounce can artichoke hearts

1 cup mayonnaise (I used light mayo because that is what I had on hand)

1 cup grated Monterey jack cheese

1/2 cup grated Parmesan cheese

Fresh parsley (I used dried parsley flakes)

So I took 8 Texas rolls out and sit them on a plate, covered them with sprayed plastic wrap and let then thaw and rise.

I chopped up my artichoke hearts, grated my cheese and measured out all my other ingredients.

I poured all the ingredients besides the rolls ;) into a sauce pan to melt.

While the mixture was melting, I squished all the rolls into one big ball.

I then got out the rolling pin and started to roll my dough out to about 12X17 inch square.

I got out my baking sheet, sprayed it with my non stick spray and pressed the dough on the pan and out to the sides. I like thin crust.

(I always order thin crust Pizza) so I pressed it out as thin as I could without leaving holes in the dough. Once my dough was spread out on my pan, I got the gooey melting goodness off the stove.

I poured the mixture onto the dough and spread it out evenly all the way to the edges.

Since I did not have Fresh Parsley, I poured my dried Parsley into the mixture when I warmed it. I choose not to let it rise too much as I said before I like thin crust. I baked it in a preheated 350 degree oven for 20-25 minutes.

I cut them into strips and placed them on a plate. You could cut them smaller or larger depending on what you like.

So if you are hosting a Holiday Party or going to one, this yummy Artichoke Appetizer will be a great hit. I am going to take them to my UGLY CHRISTMAS SWEATER Zumba instructor party tonight. You can make them ahead of time and place them in the oven to warm them up. Enjoy and Happy Baking.

Artichoke Appetizer Directions: Drain artichokes and chop into small

pieces. Mix artichokes, mayonnaise and cheese in a sauce pan and heat

Just until bubbly. Press rolls together and roll into a 12x17-inch

Rectangle. Place on a large sprayed baking sheet. Spread artichoke

mixture over dough going all the way to the edges. Let rise for 15

minutes. Bake at 350°F 20 minutes or until light golden brown. Garnish

with parsley. Cut into strips 1x 6-inches each. Makes 34 strips.
